Tuna Wrap for a healthy breakfast

Tuna Wrap

2 servings


Ingredients

185 g tuna flakes in organic broth
200 g sweet corn
50 g carrots, grated thinly
4 cherry tomatoes, diced
4 lettuce leaves
50 g cucumber, thinly sliced
sea salt & pepper
2 wholemeal tortilla wraps
balsamic vinegar or chilli sauce
dressing, optional


Method
In a bowl, mash the tuna
from the can. Mix with the corn,
grated carrots and diced tomatoes.
Season with salt and pepper to taste.
In a non-stick frying pan, lightly toast the
tortilla wrap and set aside.
Put a tortilla on a flat surface, place lettuce
leaves in the middle of the wrap. Spread
1 to 2 tablespoonful of the tuna mix over the
lettuce leaves. Add shredded cucumber and
carrots. Then roll the wrap and gently slice
to half.

Repeat with the second tortilla wrap and serve
with a side of salad.

SERVING TIP:
Before wrapping, add a dressing such as
balsamic vinegar or chilli sauce, to taste.

An afternoon tea with Tuna Tofu Egg Patties

Tuna Tofu Eggs
INGREDIENTS:
· 1 can Ayam Brand™ Tuna Flakes in Organic Broth
· 3 eggs, lightly beaten
· 1 packet soft tofu, mashed
· 3 tbsp fresh coriander, chopped
· 1 red chilli, chopped
· 1 red onion, chopped
· Salt to taste
· Oil for frying


METHOD:
1. Mix all the ingredients in a bowl.
2. Heat enough oil for pan frying in a non-stick pan and add a tablespoonful of the mixture to fry till golden brown on both sides.
3. Serve hot with rice or on its own as a snack.

Pair your home grilled steak with Spicy Tuna Potatoes

SPICY TUNA POTATO
INGREDIENTS:
· 1 can Tuna Chunks in Organic Olive Oil (with oil)
· 4 Idaho / Russet potato, peeled and cut into 1 inch cube
· 1 tbsp paprika powder or chilli powder
· 2 red onions, diced
· Salt to taste
· Oil for cooking
· 2 stalks fresh coriander, chopped

METHOD:
1. Toss potatoes with paprika or chilli powder.
2. Heat 50ml oil in a non-stick pan and fry potatoes until light brown. Add in onions and tuna and continue frying until potatoes are cooked.
3. Adjust seasoning with a little salt and serve with some chopped fresh coriander or parsley.


TUNA KICAP MANIS
INGREDIENTS:
· 1 can Chunks Tuna in Organic Olive Oil (with oil)
· 100ml kicap manis (sweet soy sauce)
· ½ tsp salt
· 1 red onion, finely chopped
· 6 chilli padi, finely chopped

METHOD:
Mix all ingredients. Toss it with blanched yellow noodles or cooked pasta and season it with a little light soya sauce for more taste.

 
Tuna Fluffy Egg



Makes 4 servings
INGREDIENTS
185 g Ayam Brand tuna flakes in organic broth
3 tablespoons chopped coriander
1 medium tomato, deseeded and
diced
salt and pepper to taste
4 eggs, separated

METHOD
1. Mix tuna with coriander, tomato and egg yolks.
2. Season to taste with salt and pepper.
3. Preheat oven to 220°C. Line a baking tray
4. with baking paper.
5. Whisk egg whites with a dash of salt until
6. stiff peaks form.
7. Spoon dollops of the meringue onto the
8. prepared tray, then drop a spoonful of tuna
9. mix in the middle of the meringue.
10. Bake for 5-10 minutes or until crisp and golden
11. brown on the outside.
12. Serve immediately.

Riding Pink ladies driver in Malaysia

Happy to tell you that I am feature on the banner above, can you spot me? Yeah I am one of the mom, motherhood is never easy but glad to have Ridning Pink by my side and Annum too. I blogged about this in May if you have not read it can click on the link to read.

Because I am a mom of two boys I got to work for my family too though I am stay at home mom. I have freelance job to do and sometimes I need to go work so I need to count on someone to help me out. I cannot be there to fetch both my kids. I have plan for July and needed one of my kids to be pick up. So I have to ask Riding Pink for assistant and the fee is RM15 as I told them that I would like the driver to first fetch my sil then my son and then send both back. It's a round trip for this, though less than 5km away.

Happy to tell you that if you are looking for lady driver for maternity checkup or groceries you can look up for them. They only pickup female rider.

Visit Cemetary at Seremban

Last Friday night we went back to Port Dickson in a car. So everyone got into the car, including sis and 2 nephew and 1 niece.

The night we reached around 11pm, next day I follow hub and bro in law and his wife and father in law to Seremban's cemetary.

8 April is a special day, it is 100th day passed of Sean's great grandmother. On the same day we also visit his aunt's cemetary which is not far away but need to go by car to reach. Over there I saw a young Chinese couple in their 30s praying for their daughter. Their little girl is 2008-2011 year passed. It's still Cheng Meng so we still see many people visiting their loved ones.

We had red bean ice cream potong in the morning. My boys didn't follow us to go as mom in law said its too early for them to wake up.

Then we headed to Puchong, over there to perform some ritual. Then we back to Port Dickson again. Mom in law is happy as able to invite great grandmother back for prayer. At home have bought a cupboad stand which is for prayer.

9 April Sunday supposed that Sean has sports day at school but not able to attend as we are back Port Dickson and I can see that hub is way too tired to drive back too. Sean has earlier inform the teacher that he's not able to participate in scout and also pull rope competition. The evening we are glad to see the whatapp that their yellow team won 1st Prize though he is not there to participate. Sean was worry if he will be blame if they loss as he is not able to take part with his team.

Free for you to go Setia Alam.

Today is my busy day and also tomorrow so I didn't go for any event today. Someone whatapps me to ask me to go a free event. The place is quite far way its at Setia Alam, which I am not familiar and need waze to go.

The time of event is very jam so I decided to let go of the event. Kids education comes first as I need to fetch my son back from tuition, there's no transporter that is able to help me. Further more the transporter is asking for RM200 for a pax for one way for a month. It's expensive just think of it is better I send my son to tuition and back on my own.

Yesterday I went the event at Grand Dorsett Hotel, parking with validate parking ticket RM7. If not it would be RM6 for first hour.

I haven't got time to update the RWG which I went on last Saturday still sorting out the photos. Stay tune on my other blog namesherry.com for update.

Travel expenses to event is it worth it?

There are so many events going on, when comes to event I am picky because I need to see my schedule to find whether I can make it or not.

I also need to check where is the place, usually the venue of important most to me. I need to travel there on my own, whether I am using public transport or drive there. I also need to beat the jam and we never know about the traffic of the area.

If there's an event nearer to me I would choose the nearby because I don't need to spend more time going out early and stuck in jam to go the venue. Other than that, you never know what you are getting from the event. Seldom there's pr that willing to tell you exactly the contain of what you are getting. I usually attend due to my interest or things that interest or there's good time to spend with kids and family members.

I do go for event that is single travel blogger invitation as I will check whether it's suitable for me to go or not the date and time. I would definitely check with my dear if he's able to fetch our kids.

It's about what we are getting from an event but it's also a place for us to social with others. There was time that I have agree to go to an event which is far away, then there is invitation that is nearer to me. Because I have promise to go for the event there, I decided to let go of the venue that is nearer to me because of my promises.

Travel with family to Genting Highlands

We are excited yes, we are because we are invited for Hotel room review First World Hotel, Genting Highland. It's going to be fun event with family and friends. My son is also a kid blogger, he's got interest in writing blog like me. I am glad he has show interest in blogging this would increase his confidence and sharing his thoughts with his readers and blog visitors.

As you know I have many blogs so I have given up a blog for him so that my son can continue using my blog to share his interest from where I have stopped. Being mommy of two boys, it's time consuming to chase and do what I love but I never give up.

It's sad to find out a friend's friend just pass away in his sleep. Life is short, so enjoy it the fullest! Why be sad, when you can be happy. Life has up and down.

I have friends with interest in shopping, shopping is a nice shopping therapy. Who doesn't like shopping? I have interest too if I have the money to shop for things I love. I have some collection of bags.
